This. It's got a handful of Galaxy references. In the pause menu, each time you select an option it plays part of the Comet Observatory theme as a jingle. Additionally as someone mentioned there's a Rosalina sprite art in the game.
Additionally, IIRC isn't the fanfare that plays when the Odyssey is ready to take off and depart to a new location the same fanfare that plays when you go to a new chapter or something in Galaxy 2?

I'm stumped on how to get on top of the wall in the inverted pyramid. The one where you ride a bullet bill through some scrolling pillars. If you look at the walls on either side there is some junk up there but I can't figure out how to get there.

Try doing a Ground Pound Jump, Wall Jump, Hat Throw, Dive. Haven't tried it yet but that usually gets you results.

Yeah no it's way too high for that.

You also can't hat jump off a wall throw. You have to ground pound -> hat throw -> dive -> bounce off hat -> Wall jump -> dive

Im working my way through it now. Think Ive googled 5-6 moons in total but otherwise stuck with Talkatoo and Toad.

My way of going about it was to never leave a kingdom until Id done everything I could do at the time (Talkatoo and Toad stop helping you when youve collected all the moons the game will currently let you obtain); all moons and all coins. Made the main game feel a lot longer, though I assume you COULD breeze through the main story really quickly.

Im currently at:
Mushroom - done except what cannot yet be finished
Hat - done
Cascade - done
Sand - done
Wooded - done
Lake - done
Cloud - done
Lost - done
Metro - work in progress
Seaside - done
Snow - havent done any postgame there yet
Luncheon - done
Ruined - done
Bowser - no postgame yet
Moon - done everything except Peach isnt there yet
Dark Side - havent touched it yet
Darker Side - havent touched it yet

Im hoping Dark Side and Darker Side bring the pain. Im nearing 800 moons and as much as Ive adored the game, I can only think of like very few that were actually difficult in a platforming sense. Plenty tough/fun to find but only a few have pushed my ability to PLAY.

Toughest one so far was probably the 2D one in Mushroom Kingdom where you have to keep moving along with the screen. That was deliciously brutal. I was grinding that one for easily an hour. Id love some backbreaking 3D platforming like Sunshines FLUDDless sections or the toughest parts in Galaxy/3DW.

All that said about difficulty, the joy is in the sheer love baked into the game. The costumes, the citizens (and how they start visiting other kingdoms postgame), the kingdoms themselves, the 2D sections, the cleverness of moon placements, the totally unexpected creep-factor of Deep Woods and Ruined Kingdom (on edge in a Mario game? what the heck?), the love letters that are Mushroom Kingdom and the New Donk Festival...

Its so, so good.

Are you talking about the shorter one inside the inverted pyramid, with just a single row of moving pillars or the one below the inverted pyramid with multiple rows over a much larger void? Because if it's the second one, here's how you do it: EM547Ry

As an addendum to this post, I just got up to the ceiling in the other room with only one row of scrolling pillars, and it's just a ceiling, you can't get on top of the walls. But there are some hidden coins on top of the little design on the wall above the door out to the top of the pyramid

Back on topic regarding Delfino Isle.

Checked in game to see it for mysel. And yeah it's incredibly suspicious that they took it off the globe, but it's still textured. I honestly am fully expecting it as DLC now.
