It was implied that he was a virgin birth. It's probably the single dumbest thing George Lucas has put in any of the movies.

It's tasteless. It doesn't fit the Star Wars universe. And it's not like Anakin was a Christ metaphor to begin with.

With the rest of the messiah attributes surrounding Anakin and the chosen one prophecy, I'd say it's most likely that it was a miraculous virgin mother birth via the Fooooorce. The Darth Plagueis line was one vague sentence about maybe being able to create life during a seduction spiel which was then never revisited.

I'm pretty sure some of the books expanded the Plagueis stuff but those are non canon now so whatever

A few details from that got into the tarkin novel and thus are still canon, but we have to assume everything else is not

I don't remember if it's Legends or not now, but at one point wasn't the explanation that because Plagueis was able to manipulate the force to extend his life/stop death, the Force responded by creating Anakin?

It wasn't like creating Anakin was his intention IIRC. It was a biproduct of his fucking around with the Force.

As you said, non-canon, but I believe the two main theories explored were like this:

1. Plagueis mastered the creation of new life by inducing concentrations of midi-chlorians. Using his Sith magic, he impregnated Anakin's mother with the knowledge that he will grow up to have the potential of becoming the downfall of the Jedi, and that he would track him down afterwards and mold him into the Sith Lord his order was waiting for a millennium. Only that Sidious/Palpatine got wind of his intentions, figured that he was going to be an expendable placeholder until Anakin would grow up, so he schemed and got rid of Plagueis at such acceptable timing that he could step into his master's shoes and corrupt/train Anakin himself.

2. Plagueis was well-versed in Sith sorcery and he did try to attempt to create a being concentrated with midi-chlorians to be the one ultimate Sith to destroy the Jedi for once, but he failed. However, as the Dark Side is a malignant aberration in the Force, the Force reacted to this 'blasphemous' attempt of the Dark Side by creating its antithesis, a being concentrated with midi-chlorians with the potential for the Light: The Chosen One of Jedi lore. Sidious/Palpatine was well-aware of his master's shortcomings in that experiment of his, and when he came across Anakin and heard the whispering rumors about his Force potential, he immediately realized what had happened. Thus, he set upon to snatch the byproduct of his master's endeavors and corrupt him into the ultimate Sith, which would accomplish the very goal Plagueis had wished for anyway, just by different means.
