People put provolone, mozzarella or parma interchangeably on chicken parm. Typically, its provolone on melted on the chicken and grated parm on top.

Mix the parmesan into the breading for the chicken and use either mozzarella or provolone to melt on top.

Do they really? I actually didn't pursue the point largely because I thought they might be right. But I thought I was confirmed right when it didn't taste like normal chicken parm.

I've almost always seen it baked with a giant slice of Mozzarella on it (or Provolone as some have said) and topped with Parm...The bread crumbs and sauce are also mixed with Parm sometimes.
