The cheapest i can find it is for $64. But I've seen old posts where its been on sale for around half that. Or would the better option be buying the theatrical trilogy for $15?

Those are movies that you will likely see 3 times in 20 years. Not a good value for your money, even though that is one of the best film trilogies of all time. Either get the theatrical cut, or wait for a massive price drop.

Extended Editions are amazing. Haven't watched the theatrical cut since they came out. Great extras as well. I think each movie has over 20 hours of extras. It worth it but it does go on sale quite a bit.

I prefer the theatrical versions. Some of the extra scenes are neat, but none of them contribute much to the plot and they make each film feel bloated. Given that you aren't dead-set on the extended version I'd definitely recommend the cheaper option.
