Beef stew with salami over boiled potatoes.

Seared the beef strips in olive oil, coated the beef in flour before to help ot thicken the sauce later, salt and pepper. Put it to the side. Sauteed onion, garlic, celery, carrot until soft, added salt pepper, smoked paprika, chili flakes, oregano, tomato paste. Sauteed mushrooms in the pot too.

Added some red wine, reduced, added beef stock, the beef. Let simmer for 45 minutes. Added red and yellow bell pepper and cubed salami. Let it simmer 25 mins.
Season to taste.
Garnish with flatleaf parsley

It had a bit of tomatompaste. It doest taste tomato, its used to give body, thickness and some color.

It has lots, its a deep dish, pic makes it look it doest have much broth.

Very good, it was a mild smoky salami. Its a bit eastern european inspired I guess.
