By mimic, I mean monsters that actually take form of something and change into some sort of monster afterwards. It doesn't have to be a chest, but at least something that fools you into thinking it is something else when you interact with it.

The blue mimics in Lufia 2 were pretty nasty
For reference, a fun sidequest of sorts in Lufia 2 was an endless dungeon. You started at level 1 with no items or spells, but gathered them in various chests as you descended down to the 99th floor and gained leveled along the way. However, items found in blue chests could be carried out of the dungeon, and were permitted again on re-entry. We'll call it a rogue-lite dungeon. It's easy to tell when side by side, but in a lone blue chest by itself? Dark Souls mimics were scary. I always attack chests first because of those. The limbs it grows look unsettling and they do huge damage too.

The second was in the Future Sewers -- hitting the save point caused an aubidle "ding" which summoned some mermaid monsters iirc. And then never again. Which is arguably rather clever.
