I think they're fairly good, though only up to medium-sized ones. With the large ones the flavor of the innards becomes too strong, IMO.

Their appeal to oyster-eaters is the flavor and the texture of the flesh, maybe the 'pop' it makes as you bite into them (oysters generally aren't cut into strips and fried as are clams).
