Because some foods I like the taste of with the additional flavor of mayonnaise. Some foods I like with and without mayo though. Like bologna sandwiches. I eat them with mustard and chips sometimes.

While I was incarcerated for 45 days I got commissary and we could purchase mayo. it was in a squeeze tube and we left it out weeks at a time and it was still fine. This is what made me look into this when I got out lol. It also isn't that horrible as long as it's room temperature rather than warm.

Not in any meaningful manner It doesn't last longer than 2 weeks in my home and it doesn't taste different really between those weeks.

Does it taste much different than the store stuff?

Lighter, less salty. Because you're making it at home it can taste like just about anything. You just need the yolk from an egg, vinegar, and mustard as an emulsifier. Beyond that you can add any number of things to your mayo. Sriracha. Paprika and white pepper, horseraddish or wasabi. You could probably sub out some of the vinegar for lime juice, lime zest, cilantro, and jalapeno for something almost tex mex themed. The only thing I'd research there is subbing the lime juice for the vinegar.

It tastes better at room temperature in my opinion. It spreads better as well. Also I have a mini fridge and fridge space is limited.
