If memory serves, Soba and Udon are made with different kinds of dough. Specifically, Soba is buckwheat and Udon is wheat. Ramen meanwhile is a Chinese dish rather than Japanese, with thinner noodles.

they're both very good
soba noodles are about the same thickness as ramen, but have kinda a... grittier texture? (I'm not sure if that's the right word) they're also usually eaten with a mild sauce, the name of which escapes me now - it's like a mild soya sauce udon noodles are much thicker than ramen and soba. they're fun to slurp. like ramen, udon is usually eaten as a soup with other stuff --- peanut butter and dick ... Udon as a noodle is a much thicker, chewier type noodle. Ramen is much thinner, closer to spaghetti.
Udon can have a doughy type texture as well. Also if you get it in broth, the broth is completely different tasting. Udon broth is a thinner dark salty, fishy type broth, served with seaweed, fish cake, tempura and possibly some veggies or egg. Ramen comes in a rich pork broth. udon sucks if it doesn't have good flavour to go with it. very doughy, tasteless fat noodles. good with a stirfry loaded with sauce, or a soup with strong flavor and thick consistancy

Udon = thick noodles, Ramen = thin noodles. Soba is like Ramen but it's made from Buckwheat. I only ever had Soba once (very hard to find in America) and it was in a cold seafood broth. The noodles were great but I wasn't a fan of the broth.
Yakisoba is supposed to be made from buckwheat but it's usually made from wheat anyway just because. --- ... Copied to Clipboard!
