Surviving the first attack is the only remotely difficult part of the fight, and even that is heavily telegraphed. The most damaging thing she does is flip you off.

Not using Mush Badges, not knowing counter/dodge timings for certain moves (or reliably being successful at them; arm swing can can nasty if you're off by even a tenth of a second late in the battle with the speed they rotate, and one wrong timing means you eat all the followup swings).

Also, there is a potential infinite loop that can cause Cackletta to never give you a turn if you countering a certain attack causes all her non-Heart segments to be killed repeatedly; in this scenario, the only way to stop the loop is if you are too weak to not kill all her parts with countering the attack, or eating enough hits that the counters cannot kill all her parts.

I had a lot more trouble with Elder Princess Shroob because I was an idiot 10-year-old and only used Cannonballers. Fight took me hours.

I remember putting down Partners in Time for a few years (I didn't intend for it to be years, but I set it down and got distracted by other things in my life) because there was such a long cutscene and other stuff before the final battle, so losing the final battle meant that you had to go back half an hour.

Cackletta was pretty easy.

However, final boss of Dream Team fucked me up because I didn't have those stupid distraction balls or whatever they're called, to hit the enemies in the background. Game never reminds or hints to buy any before the battle. Yet without those, that boss fight is almost unbeatable unless you're incredibly overlevelled.
