Because I doubt Nintendo's gonna do that instead of 3D or instead of a drawn 2D.

And if they did a drawn 2D, Metroid fans would whine about how it's too anime.

for the record "sprites" does not exclusively refer to pixel art. Skullgirls uses sprites, Shantae Half Genie Hero uses sprites, etc

Technically, you're right.

Colloquially, it's not a sprite unless the pixels are visible.
