I smoked a pork butt over easter. Took me 18 hours to smoke it. It was so tender that I could barely keep it in one piece when I pulled it out. My only issue was it wasn't as flavorful inside of the meat as I wanted and I brined it for like 12 hours. Not sure what I should have done.

I'm still a bigger fan of brisket, though.


I put a rub all over the butt and then covered the butt in bbq sauce so it was like smothered in this mix of rub and sauce and let it marinade like that for almost a whole day (got the butt in the afternoon and let it sit there until the following morning).

I do notice that for other people who make it, if it's not thoroughly seasoned / sauced, it ends up having kind of a bland flavor. A lot of bulk BBQ places will compensate for this by adding sauce after it's been pulled but it never ends up tasting as good as if you properly prepared it ahead of time.

It would take a few days at least, i know when curing a ham it's more than an overnighter. Legit 3 days or so.

Also, fatty cuts require more salt than lean. How much Tbs of salt per pound you use?

I didn't in this rub, but I do have Accent I use on veggies. I'll add that in next time.

Would that soak into the meat thoroughly? I had a 10 pound pork butt.


Probably better to use soy sauce instead of straight MSG. Soy Sauce already has tons of MSG in it and the flavor will mix well with other things.
