From what I've seen of this game (just Giant Bomb's QL), I'd like to try both dodging and blocking, if there's a class suitable for it. And I think melee will be easier to get into as a new player of the franchise.

Basically, how dodging works is that the heavier your equipment is, the worse your dodge is. If your Equipment Burden is 1/4 or less of the total amount, you get a fast roll. If it's 1/2 or less, you get a normal role. Anything above 1/2 turns your roll into crap.
Blocking is basically just picking a good shield and holding L at the right times, but you take minor amounts of damage that can add up quickly and some attacks can't be blocked.
My personal favorite class is the Wanderer, and it might suit both your needs.
Yeah, me and my friend had that problem when we first started playing. You get used to it pretty quickly, though, and it ends up being a better control scheme as you can control the camera and attack at the same time.
Here is a good topic for what stats to level etc depending on what you want to do (since in this game once you level your stats thats it and the price goes up each time. No resets / delevels this time around I think)
Huh. During the fight, a prompt came up to touch a bloodstain, and a ghost-like figure appeared. Is that an online feature? I'm actually just renting this game, and it didn't come with the manual.

I feel like I just sequence-broke. I was running up these stairs in a ruined castle, and tried to roll onto this little tiny ledge. To my surprise, I could stand on it, and I shimmied clear over into a new area. >__>
That's probably just 'platforming.' Unless you mean it was an entirely new area with a new name, in which case wtf.

Bloodstains show you how another real-life player died. Touch them, and you can see how the last 10 seconds or so of their life played out. Useful for avoiding certain situations.
I think I'm in trouble. I'm already to the point where I die, then just run as fast as I can back to where I was, because I'm frustrated. This game isn't for me, is it....
OK, I ended up rage-quitting a while ago, after tredging my way through the same enemies a good 15 times, just to get obliterated by a Demon. Maybe this isn't the best way to go first.....
