I was way far away from one, trying to get it with a rifle but it kept fucking moving

I've been playing for 100 hours and the only cougar I ever encountered was the one that is part of the I lucked out and got the drop on that one first. Here, I was just riding along and my horse comes to a complete stop like a cinematic is about to happen, then it freaks out because of the cougar and throws me off, then I get mauled immediately. Then it comes back and I go into Dead Eye but it reaches and kill me before I can get the first shot out.
