Anyways the correct way to make it is with oyster sauce soy sauce and then when you're done you top it off with a little sesame oil

you forgot scallions and garlic

chop them up and separate the green from whites. throw the whites in with garlic at the start. use the greens as a garnish at the end.

also i never used my kitchen scissors to cut meat. i just use them to open packages if they don't have them easy to open. i just cut stuff up with a kitchen knife.

This topics fried rice sucks

Cook you some day old rice
Preheat skillet
Once skillet is heated, throw in tablespoon of sesame oil
Cook eggs. Be sure to use salt pepper and MSG.
Put eggs aside
Add in more sesame oil in skillet
Use chicken leg or thigh meat. Season with salt pepper and MSG.
Set meat aside and add little more sesame oil in skillet
Throw day old rice in skillet
Add DARK soy sauce.
Add meat
Add Eggs
Add MSG and salt/pepper to taste
Mix well.
Turn off heat and add green onions as garnish

For the love of all things holy, do not put peas and carrots in fried rice. Only thing that should be in fried rice is meat, eggs, and green onions or anything else that tickles your fancy, but NOT peas and carrots omg.

You don't need day old rice to make fried rice. You can do it with fresh rice as long as you use a little less water and you cool it down before using it. Steaming the rice would give a better result as well.

Also the secret to a good fried rice is not to use too much sauce. The purpose of soy sauce is to flavor but not season the rice and you add the soy sauce to the side of the pan allowing it to evaporate to get the the smoky wok hei flavor. Season with white pepper and salt. Finish with spring onions and a little drizzle of sesame oil. You don't cook with sesame oil, it's a finishing oil not a cooking oil.
