Use modified nuzlocke rules, basically. Don't level beyond the next gym's highest mon. Limit items during battle (have to use some or else solo is actually impossible). When I beat Shield all my Pokemon were level 70+ and everyone else was around the 40-45 range. You have to look at it differently.
