My best fusion Ive made is a thai red curry chicken risotto.

Thai flavors, Italian technique.

Stock is a chicken stock infused with thai flavors like kaffir lime leaves, lemon grass, galangal.

Instead of wine, I use rice vinegar.

No cheese.
Before I add the rice to the shallots and garlic, I add red curry paste and a bit of coconut milk, then the rice vinegar, rice and cook the risotto as you would, oh yeah I marinade and quickly fry the chicken before the shallots etc and set them aside, add the chicken back later. Sometimes I add oyster mushrooms.

To add more creamyness I add more coconut milk.

Old pic of a chicken-less thai risotto.

I love to try fusion food.

Sounds good, but dont want too specific, more broader aspects like different cuisines, styles etc.

Gyro curry

I have some home made beef kebab in my freezer. Maybe I could do a kinda offensive fusion with an Indian curry and rice with the kebab, I have a lot of spices used in Indian cuisine. I know many Indian restaurants here serve beef, but that feels a bit wrong hence the offensive.

Tuna goulash.

Interesting, and tuna as in not the canned one but the fresh fish one, it has a more meat texture than fish texture so I think I could make it work.

I never even made a regular Beef Wellington. Not sure how Id make it more French other than different spices or a side with confit tomatoes, garlic and maybe other veggies.

You could also use like foie gras instead of beef or use a French style pastry like croissant style bread or something idk.

I actually used my home made Garam Masala curry with pasta the next day and it worked

(garam masala spice made from these whole spices):

But its not really much of a fusion using pasta instead rice.

I dunno, tho the croissant style would be nice, either way I still need to have the experience
of the original first.

ugh thats a challenge, had to look up bulgogi. Thats a stretch, maybe use the fish like you use fish sauce or shrimp paste, as a spice to give umami and salt. Serve the meat in Swedish soft flat bread, red onion maybe some sour creme or something.

Tex-Mex eggrolls

That does sound nice. Fill with beef, some corn, peppers, cumin, garlic, cheese etc, dip into a spicy tomato salsa or a smooth creamy guac or both.

Southern burritos

Also you could do a fusion change I did a few years ago, where I tried to make a bunch of different burgers inspired by different cuisines. The east Asian and Italian burgers came out best.

Ive made a tex mex burger with a pineapple salsa and guac, it was pretty amazing

And a burger with some Asian flavors but I dont remember what I did other than marinating the cucumbers in soy I flavored somehow. I think I flavored the sauce with some asian stuff too, this was too long ago. It was okay but not really that balanced

Those look dope! I wish I could remember my Asian burger recipe. Thought it would turn out shit so didn't bother writing it down, but I was just slapping random sauces and spices in there, but it all came together super well. Asian coleslaw and green onion were the toppings though, that much I remember.
