Do I need to care about those things early in the game? I just wanna power through the story mode and play competitive when I'm done with the story >_>

You don't have to. Remember, Pokemon is mostly aimed at kids.

It's also piss easy to max out EVs now.

Just farm up watts(you get them from raid dens, or digging pa if you have the DLC), then buy luxury balls, sell luxury balls for massive amounts(99k watts gets you 999 balls which gets you a million and a half cash), then for 500k you can buy vitamins at wyndon stadium to max out EVs.

This. The game is pretty easy before then though, like most of the series, so of course you wouldn't need to worry about that stuff until then

EVs are accumulated through battling, so your first Pokemon will likely hit their max pretty quickly in the game.

When you want to do competitive play, you can just buy a shitton of Vitamins (e.g. HP Ups, Protein, etc.) and use those to allocate EVs on a newly-bred Pokemon, so no need to worry in that respect.

Similarly, items exist to modify IVs (Bottle Caps), Nature (Mints), Abilities (HAs available from a Crown Tundra item), and their ability to Gigantamax if applicable (via the Isle of Armor DLC).

So you definitely don't need to worry about any of this silliness until you beat the game, don't worry.
