Most recipes like to say something like leave it out for 20 minutes to come up to room temperature, but I've some studies that that amount of time isn't enough to do anything.

Why would you leave it out? Once you are ready take them out and cook them.

I cook meat immediately out of the fridge, a 20F difference won't change anything when you put it on a 400F+ surface

Meat will cook more evenly at room temp. Especially grilling or pan frying
