Make a roux (butter and flour), add milk after its cooked a bit, add spinach, salt, white pepper and a bit of nutmeg. Let it cook awhile.

Prinskorv would be proud.

I would eat all that, but it might not be my first choice.
But ya, I do like that spinach!!
As for the potatoes, I'm sure they are fine, but I always think of the way boiling vegetables leaches out the vitamins.~Or, so I've been told.

Edit: After looking at it again...though I may not have ordered that...if someone made it for me it'd kill it.

I eat potatoes with the skin cause peeling them is an obnoxiously slow task and the skin gives a nice texture so why bother?

I like those types if for no other reason then you can get a perfect proportion size.
Also relatively quick to cook without cutting them.
