Mumbai in Hitman 2 - The map is so big and layered without feeling overwhelming, and the way the targets overlap and intersect is brilliant
Studiopolis in Sonic Mania: I think it's the first act that I prefer, but it's been a while. It has that really great Sonic design where there are multiple routes, and just trying to rush through it won't actually be the quickest route.

It's a map where teams take turns having one defend and the other attack. First attackers need to capture an area, then push the payload vehicle that gets summoned to the end of the map. But it has a nice balance of indoors and outdoors so literally every character can viably be played to good effect in that map on attack and/ or defense. It also doesn't particularly favor attackers or defenders or have any walls that may disadvantage one either. Decent number of flank routes.
