It's not fair to call it an amazing dish when there's a lot more foods more bursting in flavor that are more complex to make. It's like people praise just because of the presentation and high price. They want to like it because the spent over $10 on a small meal.

I used to rag on sushi, then I actually had good stuff. It's fucking amazing and I wish I could eat more of it (helps that it's fucking cheap around my town. Like $12-15 for 2 rolls? Hell yeah!)

only because of presentation. Just take high quality fish and put it on flavored rice. Put a hint of wasabi and some sauce and you're done.

I could eat just a simple tuna roll just about every day.
my 2nd fave is eel roll and I only eat that at places I trust.

sushi isn't that difficult to make, but you do have to have the right tools for the job.

and as for california roll, just make it into a rainbow roll and then it's all good.

A California roll for yourself isn't hard to make. Being a legit Sushi chef isn't incredibly difficult. You usually spend at least 5 years learning rice.

Yeah, the best sushi I have ever had are these hipster fusion Sushi places in vegas. I can tell the quality just looking at pictures of the Sushi. A big tell for quality is how red opposed to pink the Maguro(Tuna) is.

A California roll for yourself isn't hard to make. Being a legit Sushi chef isn't incredibly difficult. You usually spend at least 5 years learning rice.


Not saying I can prepare everything, but it's actually who you learn from that makes time irrelevant.
As for rice. I listen to old Asian women who school me and have a pleasure doing it. Being white I always thought there wasn't much difference in rice. I've been all over Asia, and sushi or no sushi, it's the women who know most about this staple.
It's actually amazing. I was in a part of the Philippines where all the roads are dirt and I never expected that a lady living in a shack like home would serve me the best rice I ever had.
It's like she took the little she had, and made it to perfection.

Main reason I couldn't be a sushi chef is because I seen how fast an experienced chef can serve it up, and I'm like a turtle compared to them. :(

I like the idea of mastering a handful of ingredients to the point where you can make them taste amazing together. I appreciate it because if you only have 3 or 4 ingredients you can't hide imperfection with cooking or spices. It's kinda like the Bavaria purity laws for beer. If beer can only have 4 ingredients you can compare them based on the quality of ingredients rather than who can add the fanciest hop or trendy ingredient.
