Youtube comments said this might just be a weird accent thing with bad subtitles since he said they were 9 and the price doubled, so "14" and "18" instead of "40" and "80" makes sense.

Doing so would likely compromise their food, especially Ma and Pa shops that are known for "quality" food. Many regulars would probably be able to taste and/or see the difference if they pick cheaper/lower quality ingredients. The owner is in a bit of a lose lose situation unfortunately.

It's an onion.

White tend to be milder and a bit sweeter, but the chances that a patron is going to notice is almost non-existent.

not quite. even yellow onions can really vary in taste depending on sulfur content in soil, acidity of soil, water amount while growing (will affect the juiciness of the onion, as well as flavor because ratio of water : whatever causes the flavor will be altered), and then when in the growth cycle it is harvested. finally, storage has an effect on flavor both in terms of storage conditions and length of storage.

I grow 5 types of onions in my yard, they can have very different flavor even if they are from the same seeds.

If only business was as simple as "just get cheaper onions from somewhere else". And notice I'm talking about ingredients in general, not just onions. The owner in the video used onions as an example for increased cost, but it takes more than onions to make a good burrito. Most likely ALL the ingredients he used increased in cost. He can probably go penny pincher mode and try to only go for cheaper ingredients, but that can affect Ma and Pa restaurants by pissing off the regulars.
