I've never seen lasagna made with cottage cheese, thank God. That sounds disgusting.

i don't know what ricotta is

Some of us were making a shit ton of lasagna at a family reunion some years back and my aunt (her parents were Italian immigrants) was using bechamel instead of ricotta. Someone asked her why she wasn't using ricotta and she told us the differences. Absolutely with Ricotta. As for the comment on cottage cheese being an American thing I have only known one person who used cottage cheese because something about the texture of Ricotta bothered her. I know some people do it but Id hardly classify it as the main American way. Ricotta is absolutely the most popular prepared way.
