Because whoever is now in charge of translating wants dry, boring direct translation compared to more poetic translations.

Reminds me how they butchered the new dub of Neon Genesis Evangelion.

The steel sky bit is weird and out of character. Saying she doesnt like this sky isnt dry, its pointing to the fact that they are in another universe

The new line is a more accurate translation. I'm going to say with some certainty that this line is at least mildly important in some way in Rebirth, so they had to change it to actually fit the writing. I do prefer the original, but I get it. And while they were at it, they updated Tifa's cowboy outfit in the flashbacks to match the Rebirth version.

It's also kind of funny that Aerith (or is that Aeris?) had a line that was updated to more closely match the original Japanese but people prefer the original mistranslation.

Redoing stuff in old media is generally terrible. It is like how George Lucas made changes in old Star Wars movies to match the stuff in new movies (i.e. changing Boba Fett's voice). Its not a perfect match to the Star Wars situation because its a translation, but language is never 100% directly translatable and translation can be a form of art as well.

The ending line fits fine in the self contained context of FF7 Remake. If its so important to Rebirth, just have a flashback in Rebirth that has the "proper" line.

You shouldn't have to change a finished piece of art because it doesn't perfectly match a new piece.

Isn't it just to highlight that after living under the plates of Midgar her whole life, she finally gets to walk under the sky for real...and she just doesn't like it? She misses the familiarity of the "steel sky" she always lived beneath.
