I know we "eat with our eyes" and such and there's a wow-factor in a restaurant

But sometimes at home I'll try this. You know, lay the steak on top of the mash potatoes or whatever. and then be like..wtf did I do that, now it's literally more complicated to eat.

If I'm making the food and eating it myself then I don't care. If I'm at a restaurant then I expect some form of presentation since that's part of the experience I'm paying for.

Presentation is important in restaurants, but they mix it up with weird individualist im such a cool waiter i can do this with a pepper shaker, and not like, presenting the food in a memorable or atmospheric way. They should take notes from Japan on that, and not some dumb youtuber.

With a quality chef, the plating isn't just for show. It allows for the best combination of flavours when eating.

Same goes for garnish. A mediocre chef does it for effect. With a skilled one, it's an essential part of the flavour profile.

I never understood this explanation. I mean, I understand it from a logical perspective, but like, why not just have the person eating the food mix the flavors? Most people do it that way, anyway.
