I assume they can take on other forms and they eat wildlife like rats and stuff.

Plenty of games have non chest mimics. Undertale and FFXII had mimics that hide as save points.

Prey (2017) handles mimics quite well, almost too well given how my first instinct when confronted with them was to run around the office I was in whacking everything in sight with a pipe wrench.

That would be a fun bit of cyclical lore in a story. Once upon a time, people stored treasure in chests. Then mimics showed up so people stopped using chests. Chests became known only as monsters, folks start avoiding them at all costs, and everyone threw their own out. The mimic population declines due to a lack of people falling for it. Then some sneaky folks start crafting chests that look like mimics to hide treasure in. Rinse, repeat eternally.

Because most people's interaction with mimics is through anime/JRPGs, as opposed to D&D where anything is fair game to be a mimic. A famously annoying one was one that mimicked the ceiling and would smother/crush you once you entered the room proper.
