I mean, the main anime Team Rocket trio were all good people (and Pokemon), it doesn't actually make any logical sense why they chase Ash around to try and catch his Pikachu, it's handwaved away for the sake of comedy..

I guess because it was strong

That said, I think they just wanted to be besties, but didnt want to admit it. So, use Pikachu as an excuse to hang with them

Also ep 2 or 3 they get the idea its a rare pikachu

Pikachu battled an Onix and won. It IS an exceptional Pikachu.

Who had Yellow edition and didn't try that? Quick attack spam and a lot of potions.

Yeah, despite all of their schemes, I'm fairly certain Jessie and James mostly followed Ash and Pikachu because they took a liking to them, but also had a job to do. After a while, and somewhat before I'd stopped watching, I felt like many of their schemes could be seen more like Goro Majima in the first Yakuza game - mostly just training and testing the main protagonist when the opportunity arises.

This, basically Any electric type would have done the trick after soaking the Onix. Tbh, the water problem did a number in it, already

Rock types are supposed to be completely immune to electric damage; being wet shouldn't change that.

Not that, but I did something similar when playing X. I was determined to win in the Fighting type gym using only my scrappy little Pancham. Definitely went through a lot of items to do so.

Onix is dual rock ground

Heres what Bulbapedia says:

Onix was first seen in Showdown in Pewter City during Brock's Gym battle with Ash at the Pewter Gym, where it was used against Pikachu. Onix wasn't fazed by Pikachu's Thunder Shocks because of its secondary Ground type, and was easily able to subdue Pikachu with a Bind. Ash decided to forfeit the match because he couldn't stand to see Pikachu in pain. Onix was also used in Brock's rematch with Ash where it battled Pikachu once again. This time Pikachu's newly learned Thunderbolt attack was actually able to cause damage to Onix, though it was still not enough to defeat it. Onix once again had Pikachu in a Bind until Brock told it to stop because Brock didn't want to hurt Pikachu. Eventually Pikachu's Thunderbolt set off the sprinklers, severely damaging Onix because of its weakness to water. Pikachu took Onix down with one final Thunderbolt, but Ash chose to forfeit. Brock decided to give Ash the Boulder Badge anyway, and then joined him on his journey, bringing Onix with him.
