Given the perceived risk some of you see, you might expect to regularly hear of people getting sick from eating burgers. I've, in fact, never known somebody who got sick from an undercooked burher.

The process of grinding the meat down means a lot more surface area, which makes it more susceptible to bacteria growth.

Theres not next to no risk, which is why the FDA guidelines instruct restaurants to cook burgers to an internal temp of 155F, and the USDA and CDC recommend internal temperature of 160F for burgers or ground beef.

Restaurantsin some states are allowed to serve undercooked burgers, provided that customers specifically request it to be undercooked, and that they have written warnings about consuming undercooked meat on the menu, but this isnt true in all places.

I've never known anyone who has gotten sick from an undercooked burger. Have you?

How often do people get ecoli from eating an undercooked burger, in relation to how many undercooked burgers are eaten?

My guess is that the risk is incredibly low, owing to the fact that ecoli needs to be present to begin with which is probably very rare.

Yeah, dry ground beef sucks. It's not a serious concern for non-burger applications, because it's naturally going to be in some kind of sauce or vessel that will keep it from getting dry. But a burger is *just* ground beef in patty form, slapped on a girll or in a pan. You overcook that thing, it's going to be dry AF and bring down the whole sandwich with it. Medium well is probably the sweet spot where you're 100% sure it's safe and it's not a hockey puck, but I prefer to hedge a little, personally. I do medium: wouldn't do medium rare, but I respect that.

But to answer the question...Yes a burger should be cooked medium well, any chef worth half a flip will do that. It's not burnt, and goe burgers you generally want a nice char on the outside anyways.

Anyone saying it's "burnt" are one of those lame ass "rare or gtfo" kinds of meat eaters... pretty much the horseshoe of a crazed Vegan. Different cuts of steak/beef need different optimal temperatures in order to draw out the flavor. That is highly dependent on fat content, bone in/out amongst other factors.
