Basically, yes. Between that and it needing to be prepared just right or it will make you sick, it had historically been a thing only poor people would eat. Then slavery happened in America and slaves made recipes with it that were good and somehow or another it ended up being considered good tasting and fancy and suddenly rich people wanted it and the prices shot up ever since. :/
