99.99999999% of coffee in Italy is espresso. A cappuccino is kind of a comfort food.

Italian food actually sucks though. Italian Americans made it marginally better but even then it's still but great. Like, most Italian food is (insert random pasta) with a rotation of like 7 different sauces. Outside of pasta, theres a heavy focus on seafood which is already divisive. And then their meat dishes are basically all just variations of wine reductions. Pizza is like the one thing that actually stands up in real Italian food.

Incidentally, the explanation behind the garlic bread thing is probably because Italians in Italy don't actually like garlic all that much, contrary to stereotypes. I think Italian Americans picked up their love for garlic from other Mediterranean cooking styles that they were exposed to when reaching America. Really weird considering how great of a foodstuff garlic is, but a lot of Italians flat out dislike it.

Nah. Not even close. A classic big Italian dinner is 5 different courses in smaller portions. Only one of those is going to be pasta. It's an extremely diverse food selection.

Plus the pasta itself is just a starch. The sauce is what really sets the dishes apart. Saying it's all just pasta is like saying baking is all just cake as if there wasn't a massive difference between chocolate cake, carrot cake, and angel food cake.

If you use enough water in a big enough pot and don't put your stove at its highest setting, *usually* you can just let the pasta sit there. I've been cooking a lot of Italian dishes lately (rigatoni alla gricia, bucatini alla amatriciana, linguine with clams, etc.) and I haven't found it to be much of an issue.

On a side note, I'm developing a taste for pecorino cheese. There's something about knowing that I'm eating the food that Caesar's legions ate on campaign

Hehe, there is a Long Island style deli right near where I work, I hit them up a lot.

But ya, as for me, My Great Grandmother was off the boat, and I was lucky enough to grow up with her.
Pretty much everything I cook has a Mediterranean bent to it. The only Oil, is Olive Oil.

Oh and ya, I'm upstate. ...Actual Upstate...

You can absolutely grate it by hand and I've even just used a knife in a pinch but it comes out best when used in a rotary grater.

If you're near queens there's a place I recommend in Whitestone called Raspberry Farm for Italian shit.
