Gonna start eating ludicrous amounts of chicken & rice, but since I don't cook I have no clue what to season this chicken with except salt & pepper.

Just go to the store and pick what plays to your preferences in the ingredients. Then experiment with others if you're not satisfied. It's hard to recommend something without knowing someone's likes and dislikes.
