Butter is made from churning milk not from milkfat. The % value of milk indicates how much milkfat has not been skimmed, not how much of the substance is composed of fat.

Nutrition wise, skim, then 1%, then 2% are the best for you because the calories are coming less from fat and more from protein percentage wise.

Whole milk is 3.25%

Buttermilk, despite it's name, has only around 1%. It's called buttermilk because it's actually (or was in the old days) the leftover liquid from the milk used to make butter.

The % on milk is by weight, what percentage is fat.
1% = 2.5 grams / 240ml serving
2% = 5 grams / 240ml
whole milk = 8 grams / 240 ml
Raw milk from a cow = 3-5% fat, depending on cow.
Buttermilk varies from 1%-whole milk levels, i think its possible to get ones with added fat as well, but not sure that. The difference in taste and "thickness" is primarily because it is slightly curdled.

Raw milk can hurt you because its a great way to transmit disease or bacteria.

This is true. I think, and correct me if I'm wrong, butter is the highest at 85%. Whipping cream is the highest that can be considered a liquid at 35%.
