They dont do "ultimate editions" anymore. They stopped during gen 5 when they decided to just make black and white 2. Gen 6 never got Z, 7 never got whatever goes with sun/moon, and sword/shield isnt going to get anything either.

Okay

So which one should I get? I'm not going to be trading or playing online, I just like to catch cool Pokemon and play the main game. Maybe do some of the side-content

Whichever one has the exclusives that you like more. I don't remember which has which other than the cover dogs though.
