Looking for some suggestions. It's one of these or FFRemake but I've already beaten it :/

I would say...

FFT > FF6 > TO > FF9 > KH2 > KH > FF8.

I don't care for Pokemon. FF8 sucks. You should play KH before KH2.

Honestly, I wouldn't consider FF6 much of a grind. Being a SNES JRPG, it isn't that long. I think ~30 hours is a reasonable expectation for a first playthrough, if you don't try to do all the side stuff. Maybe ~50 if you do.

When I think of a grind, I think of Persona 3 - 5.

You say that, but TO was brought to the PSP by Square-Enix. Unless TC has access to the SNES or PSX versions.

Final Fantasy IX has the best story, but FFVI is shorter and just as good.

Edit: Or Xenogears. I love the music in the game.

Bit of a niche recommendation, but try Mana Khemia: Alchemists of Al-Revis. It's a bit more weeb than anything on this list, but the gameplay is really fun, legitimately one of my favorite battle systems in a turn-based JRPG. I also find it really satisfying how character progression is directly tied into how much effort you put into alchemy, and since the items you can actually acquire and synthesize are limited by your story progression, it's impossible to powerlevel (so you don't trivialize the game too much), and you won't be underpowered either as long as you synthesize everything you can whenever you can. The story is more of a slice-of-life and character driven affair with generally low stakes, which I find a really welcome change of pace from the usual world saving shenanigans.
