So she tells them she's not completely sure she'll get it any time soon. They suddenly change policy and gets fired before getting a chance to explain if she had changed her mind now that her job could be on the line. Yeah, this one is mostly on the employer.

"At will" employment is a disgrace and no country that wants to call itself modern should allow it. No job should be able to fire its employees for not meeting new criteria they have brought in without giving them time to meet said criteria.

Its sadly on her for telling them she was planning to get pregnant. As a woman, never do that. You dont tell them until you are pregnant and protected for being pregnant. End of story.

There are multiple vaccines, some more effective than others. It's fair to take a wait and see approach. This is the fastest a vaccine has ever come to market, it's not crazy to proceed with caution, especially if one plans to be pregnant. Who knows what the effects will be. Besides, they said it was optional and then switched it to mandatory and gave no opportunity for her to update her answer. Different circumstances produce different answers.

They aren't, thats the point. Restaurant workers won't be able to get it for at least a month or more probably, maybe even longer. No one in that restaurant will be vaccinated any time soon. Which is why firing her for not getting something that isn't even available for her to get yet is going to come back and bite that place on the ass. I guarantee you she has already been contacted by a few lawyers and told you can absolutely sue for this and you will win. Even if this is technically legal in the end, just the bad publicity alone will cause the restaurant to settle and prevent anyone else from doing the same if they know whats good for their business.
