I used Macrium and copied my 500 GB samsung NVME SSD to a 2 TB Samsung NVME SSD but when I tried to boot from it, it didn't work. I think I did all the sectors right.

I don't know how your partition table is laid out, but you should be able to do a straight clone to the new disk, then grow your filesystem once you've booted and everything is confirmed working.

Go figure, turns out Samsung SSDs use special software and require Samsung's data migration software.
On the bright side, it's a whole lot easier to use, doesn't even have you bother with partition sizes --- Well allons-y, Alonso! ... Copied to Clipboard!

Huh, I used the far simply Samsung Data Migration system, which was literally one single click, and literally everything works.

Seems noticeably faster than my previous 500 GB SSD, which I didn't expect. I did a Crystal Disk Mark test on it. Previous SSD was about 2500 MB/sec read, this is 3400 MB/sec
