I do that in general. Its a comforting mechanism that can keep you out of trouble. If they are blatantly accusing me of something that I didnt do then there is no way in hell Im apologizing outside of retail. For other things like someone emptying some emotions on me? Sure.

Myself, yes - I don't mind, I do truly feel sorry I may have caused something even without direct fault of my own

On a 'logical' level I don't get how you can't just apologize considering words are fickle and almost every scenario can end with an apology or even get better when someone realizes you are going out of your way to empathize. Is not apologizing based upon the idea 'well they'll never learn if they aren't corrected'?

I guess I have wayyy too much trust in society

In all seriousness, it's the kind of thing that can help de-escalate conflict. By and large, retail doesn't care if you're "right". They just care that people can go about their time in the store without feeling uncomfortable, and witnessing conflict will totally do that.
