For the simple reason that when you drain the pasta, it continues to cook. When you toss it with the sauce, it continues to cook. If you follow the directions on the package, your pasta will be overcooked. So always reduce the time by one minute, two minutes, three minutes at least. You will taste the difference. It's very simple.

True, at least depending on the situation.

If I am doing Spaghetti with a red sauce, I usually do it with the sauce on top.
But for an Alfradio and maybe a Pasta salad then yes I do the undercook trick.

I use just enough water to cover it, undercook, don't drain, and use a pasta server to put it directly from pot to sauce. The starchy water helps bring the sauce together.

I dont mix the sauce together. I put my portion in a bowl, and scoop sauce from the pot. I always keep them separate.

False. You're supposed to drain it, then run it under cold water immediately, effectively stopping the cooking process.

Also, I prefer sauce on top, rather than finishing the pasta in the sauce itself.

If you're cooking fresh pasta, you should toss the pasta in the sauce so it absorbs the sauce. Dry pasta doesn't really absorb the sauce as much, it doesn't need to be tossed together.

one all important thing i learned about pasta is the amount of salt required.

i tried to make do with a few small pinches when first cooking and it tasted bland af even for pasta xd

I never time pasta. Just pull a piece out when I think it's about done and try it.

And you have to really cook the shit out of dry pasta to really overcook it to the point that it's ruined

Also save your pasta water when you drain it and add a little to the sauce when you mix it with the noodles. Game changer

This, easily the best way to do things for a home cook, and since this is CE that's all that matters.
