Adam Ragusea did a video on it a while back and I tried it out yesterday. Pretty fucking good for something with a simple street food vibe.
You just put cheese in a brioche bun and smash it in a skillet with a weight so it cooks flat and oozes out the sides, which caramelizes into a cheesy crust. Butter pan, low-medium heat, 3-4 minutes on both sides. Could probably do well in a food truck with cheese options, and maybe melts. --- ... Copied to Clipboard!
