That is... actually a pretty hard question to answer. For oldschool music, my favorite album is this:

Tau gar, la durundena is one I really like just because it's got an unusual feel to it (actually, a lot of the songs on this album do, but I really like the rhythm of the speech in this one. That said, every single song on this album is excellent. I think there are samples of the songs on Amazon if you want to take a listen).
Seriously if you like choral music, this is a GREAT album to pick up. I listen to it year-round.

For your 20th-21st century Christmas songs, Walking in the Air is the obvious winner here. I've listened to several versions of it, but the original one is probably still my favorite:

I actually like O Holy Night but I am EXTREMELY picky about what version I'm listening to. Most of them overdo the instrumentals in an already pretty melodramatic song at the expense of the singers to the point where they outright drown out the singing in parts (YUCK AWFUL) or don't put the emphasis in the places that I prefer or overcomplicate the performance unnecessarily. Probably my favorite versions off the top of my head are:

The first one is nice because the organ isn't overpowering/distracting from the vocals.
The second one has better singing, but the instruments detract a bit for me.
The King's Singers did O Holy Night and the vocals were great but the freaking stupid-ass instrumentals ruined it.

Carol of the Bells is a difficult song to screw up in comparison, tbh, lol.
