I don't play much of the genre (besides Smash, but that doesn't count). I just got it because I was checking out stuff on PS Now.

I've put 9 hours in. I suck BAD, that's to be expected with this genre. I'd imagine most people stop playing after losing so much, but the fact that I'm sticking with it despite probably means I could get into this.

I bought and am downloading FighterZ right now. We'll see how that goes.

FighterZ is definitely not a good one to start with. Tag fighters in general because of how unfun the broken teams make them

Disagree. FighterZ has a lot of newbie friendly mechanics, a fairly deep single player mode (relative to other fighters), and ASW games have fantastic tutorial modes. The only other ASW fighter I could potentially recommend over it for many of the same reasons is Persona 4 Arena.

Yeah, it's fine so far. I love leveling up/equipment mechanics in games already, and the story mode seems like a glorified tutorial.

Take advantage of the relative ease of the story mode and the way characters are introduced to really mess around with assists. Now is the perfect time to try out different combinations and get a feel for how different trios complement each other. If you can, make it a goal (at least in the beginning) to win each fight in a different way. Either with a different character, or a specific super, or an assist-extended combo.... force yourself into different situations and you'll be more prepared in the future to deal with them.
