With health bars you can gauge how long the fight will go for, what's doing the most damage, when the second phase is etc.

No health bar means you probably have to knock the boss down a certain amount of times to let the finishing cutscene play, so your equipment, level etc doesn't matter as long as you play well.

It's not, and will never be fun to attack a boss for like 20 minutes with no variation

I like it to only show when I hit them or be somewhere they don't get in the way. That or some indication.

yeah idk why developers think giving everything 3x as much HP as it needs is "rewarding"

HP isn't something you just inflate to bloat the game runtime. I like how Nintendo did it in Super Mario Odyssey, the bosses took 3 hits to down and every time you hit them they switched it up. If you were good at the game bosses were short and sweet and still remained challenging when you got to the challenge runs. They did that in BOTW as well, I never felt like I was fighting for longer than i should have been.
