Texas brisket is one of the most amazing things ever, but I do have to say that I like to put BBQ sauce on it, which is not traditional for Texas BBQ. So I guess I like a mix.

after that, texas, kansas, carolina

Agree with all of this.

North Carolina BBQ is better than South Carolina though.

Joe's KC is my favorite.

But the thing is, if you ask 100 different people around KC what their favorite BBQ restaurant is, you'll get 100 different answers.
Each one has their own special thing about them.
For me Joe's has the best beans
Arthur Bryant's ribs
Q39 for Turkey
Wabash for sauce
Jack's has best beef stuff
Gates has the best employees that yell at you for not knowing their menu by heart.

This is actually one of my favorite parts of going to Bryant's

They don't give a fuck about being nice. Good on'em

Yeah, that is too much sauce and I feel it misrepresents KC barbecue

So for those of you voting Carolina, I'm curious; is it specifically north or south carolina? Or would you be fine in either state

I've had all three and I do not like the tomatoey saucy flavors of KC. Texas and the dry rub stuff is good but I vastly prefer the vinegar like flavors of NC and the general spiciness

I've never been to any of those states but I'd say TX just by reputation alone.

I lived in NC most of my life and never really liked the BBQ. It also isn't that prominent, like I only had it a few times.

I've lived in Texas for almost four years. It's delicious and everywhere.

IDK about Kansas city

Do it yourself mate. I bought a bbq from Tesco for 60 quid last year and have used it loads. It's not as good as an expensive now with side smoker, but it's not bad. Looks like this;

https://i.ebayimg.com/images/g/HAgAAOSwsYpZ-ufy/s-l400.jpg

Made some great stuff on it. Did smoked pork shoulder last weekend and shredded it and made the best pulled pork I've ever had. Done ribs a few times, wings, brisket, lamb shoulder a bunch, beer can chicken...

Biggest issue I have is that our brisket is a different cut to the American one. It usually has loads less fat on and is smaller, so it's rare you can find one in the supermarket that's good enough for low and slow, and it took 3 different butcher shops until I found one who knew exactly what I was after and what I wanted it for and it wasn't especially cheap.

Real bbq is served on butcher paper.
Although styrofoam/plastic plates are acceptable for picnics.

But if you can eat it off a paper plate then shame on that bbq.
