How is it an insurance risk? We lock the doors once all the customers are out.

Because, while the doors are unlocked after closing time, someone can come in and rob you.

You do know that the most popular time to rob a place is after closing time, right? That's why you lock the doors at closing time.

We leave the doors unlocked while customers are still in the store and we still have people everywhere up front including a couple of people sorting stuff out the front that needs sorting at close and as soon as the last customer is out we lock the doors.

And I guarantee that your insurance company would shit a brick if they knew.

My work we lock the doors at closing time. As the last straggling customers check out we unlock the doors for them. Once all customers are gone we set the alarm that goes off if any exit door is opened apart from the main entrance.
