Is the show building to one huge resolution in the story like Full Metal Alchemist, or is it more like one adventure after the next such as Dragon Ball Z?

Im assuming the second with how massive the episode count is.

The former. It's just going to be really long. Even considering that, the episode count is insanely padded with tons of filler, as well as episodes specifically paced slowly to keep up with the manga release. The manga is a much more reasonable experience to take in.

What if I really enjoyed the anime though?

In practice it's an adventure story like dragon Ball.

It has an overarching plot that will culminate in some final thing, but it's not focused like fma nor do the individual arcs really contribute to that overarching plot much either.

But yeah I would recommend starting with the anime and seeing if the pacing later on bothers you or not and either sticking with it or switching to the manga accordingly

For some it's a deal-breaker for others it's not really a big deal

And we also still get some gems like last night's episode

Would there be any consequence if I skipped all the filler in the anime first and watched the episodes that follow the manga? Then I could go back and watch any of the good filler that was worth watching.

You're fine to skip all of it although I would say watch the G8 arc just because it's really good

But eventually once it starts doing a chapter an episode they don't really do filler anymore outside of like once a year when they're about to Hype up a new movie
