Sunday I was at the butcher shop, they had a good selection of real USDA Prime standing rib roasts, aka prime rib, so I chose which of the many USDA prime ribs I wanted in the size I wanted and chose a 4 pound $92 pound roast. Expensive yes, but even at minimum wage you could earn enough for it in a long days work in Seattle. 1000 years ago this would have only been available to kings. And even then I'm guessing very few would have had access to beef of this quality. USDA prime does not just grow on trees. It grows on cows. But only if raised carefully. And then it was dry aged for 28 days in a climate controlled environment. So needless to say, access to this quality of meat 1000 years ago would have been difficult.

Anyway, so I cooked it today and biting into it was like how Cyrus does it in The Matrix. As I put that meat in my mouth, all those juices gushing forward to my tongue and that proteiny, salty taste satisfies everything. How lucky are we that we are alive now? 1000 years ago I would have been a reindeer herder or turnip farmer.
