most places in canada the land that invented the poutine just use shredded mozzarella
which is actually better for poutines because shredded cheese melts better than curds and the cheese flavor goes all throughout the dish

I don't care what you want to call it but shredded mozarella is way better than cheese curds. Also, French's chicken gravy goes surprisingly well on poutine. We make ours at home fairly regularly.

I'm in Vancouver and there's a place called the Poutenerie whose gimmick is that everything they sell is poutine with some extra shit on top. E.g. they had a "Mexican burrito" poutine which had like jalapenos and crap on top. It was kinda greasy and a bit gross.
