Its like mandatrory in most thai cooking, and used in many other asian dishes.

Its pretty much used to season instead of salt, most of the time it does not give fish taste, but umami and salt.

My wife's family uses it for pretty much every Thai dish they cook. That stuff smells like what I'd expect someone's gangrenious asshole to smell like. Absolutely disgusting stuff. They use it in kaijiew (Thai omelet) but I make sure they keep that shit out of mine.

I had several Filipino friends back in the day. What is that condiment that is sort of like a paste and has an aftertaste of old pennies? I think it's made from shrimp and it was pretty tasty. I mixed it with rice when I was eating over at a friend's house for a snack.
