I also enjoyed playing Sonic Heroes. I prefer 3D over side scrolling because you feel like the Flash or another speedster when running forward instead of sideways.

The original Dreamcast sonic games were not bad, but had bad ports, and since no one owns a Dreamcast anymore (sad face), you get more people with bad experiences replaying it or playing them for the first time on another platform. Doesn't account for all the other non-Dreamcast sonics though.

But I attribute the Sonic decline to Sega's restructuring after pulling out of the console market, and just struggling to make a quick profit instead of a long-term investment for a polished Sonic game.

With Sonic Mania, it was basically a low-risk for people willing to accept low-pay (I presume), allowing more freedom and time.

One of those Youtube shows, either Extra Credits or that one Youtube series with the one guy monologuing over some pictures, made that point that Sega kind of bought into their own hype with Sonic. They marketed the original games as being about speed and going as fast as possible, but it was actually more about controlling the flow of movement.

I played the game cube version and it's glitchy as fuck. I was only able to get all the chaos emeralds with team Amy because of big. Also team Amy was annoying as fuck. The music was sweet though so I'll give you that.

Sonic's speed fit the Genesis games fine. But it's hard to have an extremely fast character control well in a platformer in 3D. Levels need to be massive enough to account for the rapid speed but also not just an auto-running piece of cake.

the art style change of sadx was controversial and there's a couple graphical errors introduced in the rereleases, such as missing lighting effects or incorrect graphics
the gamecube versions add more content and have better load times and presentation, and fix a lot of bugs of the original versions (though some new ones are added)

Sonic Adventure 1 was okay. Sonic, Tails and Amy overall were fun. Knuckles and E-102 were okay. Big the Cat was bad. The story and hub worlds were cheesy fun.

I'm playing through SA2 now and near enough everything about it is a step down. I'm pretty impressed how they somehow managed that.

It's not that it is hard to make a good Sonic game, it is just that for too long Sonic games didn't even need to be good and they would sell. So as far as Sega was concerned, why make quality a priority.
